Meatballs of the day

We make them with our own meat: veal selected by us and pork from farms dedicated to cooked ham. We soak our bread, add salt, Parmesan cheese, eggs, and fresh marjoram, and knead the dough by hand. The meatballs are fried in extra virgin olive oil, then deglazed with white wine and baked in the oven. Once cooled, we season them with our “buono buono” sauce, add sautéed zucchini, and serve.
A quick and tasty dish, just like homemade.

For this recipe, we start with Castelluccio lentils, small and flavorful. We slowly sauté the Andezeno onion, then add the lentils and a good tomato sauce. Let it reduce slowly and finish cooking with a well-made vegetable broth.
A simple and comforting dish, where the quality of the ingredients truly makes the difference.

Roman-style gnocchi

Roman-style gnocchi

We start with truly delicious milk, from our happy, grass-fed cows. We bring it to a boil, add the durum wheat semolina, a pinch of salt, nutmeg, and egg yolk. Once cooked, we pour it into molds and let it cool. The molded gnocchi are layered with butter, raclette cheese, Parmesan cheese, and a final layer of raclette cheese. We bake them in the oven to gratinate.
A simple, traditional dish that becomes a true pleasure with quality ingredients.

Barilio – Our handmade savory stick

Our “gourmet street food”: veal and chicken meat, enriched with diced zucchini and carrots, breaded with crumbs made from our freshly baked bread.
Fried until crispy on the outside and tender on the inside.
Served with:

  • BBQ Sauce: made with tomato, spices, and a splash of apple cider vinegar
  • Sweetness Sauce: our house mayo blended with jam made from fresh, spicy round chili peppers

We cook our ragù slowly, the traditional way, using veal from a small farm that respects animal welfare and pork from a meticulously run butchery.
The pasta sheets are hand-rolled using fresh eggs, and we make the béchamel ourselves with whole milk from pasture-fed cows or those fed only hay.
Each layer tells the story of an authentic, comforting cuisine.

The Three Little Pigs

A trio of soft sweet buns filled with our Pulled Pork, slow-cooked for 9 hours at low temperature and flavored with BBQ sauce.

Our Pulled Pork

We prepare it with care and passion: pork neck is marinated for three days, massaged with BBQ sauce and a spice mix, then smoked and slowly cooked for 7 hours at low temperature with apple juice, maple syrup, soy sauce, and broth.

The result? Tender, juicy meat, hand-shredded and seasoned with BBQ sauce.

We prepare the sandwich

We toast the buns on a grill or non-stick pan, fill them with pulled pork, and add our “sweetness sauce” and BBQ sauce.

Our crêpes are thin and delicate, cooked one by one, and filled with a rich yet light mix of fresh ricotta, freshly steamed spinach (or Swiss chard when spinach is out of season), and very fresh eggs.
They are laid on a sauce made from tomatoes, béchamel, and fragrant basil.
