We use Carnaroli rice from Baraggia, oven-cooked to enhance its aroma and keep it fluffy. It’s finished with Taggiasca olives, Pantelleria capers, Swiss Emmental for a creamy touch, and vegetables—roasted bell peppers, steamed carrots and zucchini—all diced for perfectly balanced bites. A colorful, flavorful, and never boring salad.
