Ricotta & Spinach Crêpes

Our crêpes are thin and delicate, cooked one by one, and filled with a rich yet light mix of fresh ricotta, freshly steamed spinach (or Swiss chard when spinach is out of season), and very fresh eggs.
They are laid on a sauce made from tomatoes, béchamel, and fragrant basil.
A homestyle dish—simple and sincere.

Side dish options:

1. Spinach or Swiss chard, cleaned, washed, and steamed, then seasoned with extra virgin olive oil, a pinch of salt, vinegar, or lemon juice.

2. Zucchini or carrots, baked with a drizzle of oil to enhance their natural sweetness.

3. Carrot salad, dressed with Amalfi lemon juice and olive oil.
