We gently stew the onions, choosing depending on the season between sweet Giarratana onions and delicate Andezeno ones. Then we mix them with fresh eggs to make a fluffy, golden, fragrant frittata. Few ingredients, treated with care, for a full and rounded flavor.

A proper frittata: freshly steamed spinach (or Swiss chard, when not in season), freshly gathered eggs, and a pinch of fresh marjoram for an aromatic touch.
